Preparation Time: 5 minutes (plus overnight chill)

Ingredients

  • 1/2 cup (45g) gluten-free rolled oats

  • 1 cup almond/coconut/oat milk (choose the one which you like the most)

  • 1 tbsp coconut oil

  • 1/2 banana, sliced

  • 1/2 tsp ground cinnamon

  • Vanilla extract

  • 1 tsp maple syrup

  • Chopped nuts

  • Blueberries

Directions

  • Combine the ingredients in a jar (except the banana).
  • Refrigerate overnight.
  • In the morning, fry the banana slices in coconut oil and cinnamon.
  • Take the porridge out of the fridge and give it a quick stir before eating.
  • Top the porridge with the warm banana, chopped nuts, and blueberries.
  • If you’d rather have it warm, just pop it in the microwave for a minute or two.
