Ingredients
1/2 cup quinoa
1 cup water
1 cup unsweetened plant-based milk (almond, oat, or coconut work well)
Pinch of sea salt
1–2 tsp maple syrup or date syrup (optional)
1/2 ripe banana, mashed (for natural sweetness and creaminess)
Pinch of cinnamon

Fresh fruit (e.g. berries, sliced pear, grated apple)
Chopped nuts or seeds (e.g. pumpkin seeds, almonds)
Coconut flakes
A swirl of nut butter or tahini
A dash of cinnamon (optional if tolerated)
Directions
- Soak quinoa in cold water for an hour before cooking.
- Add rinsed quinoa and water to a small saucepan.
- Bring to a boil, then reduce heat, cover, and simmer for about 10–12 minutes until most of the water is absorbed.
- Stir in the plant-based milk, mashed banana, and salt.
- Simmer uncovered for another 5–8 minutes, stirring occasionally, until creamy and thickened to your liking.
- Taste and add maple or date syrup if desired. Spoon into bowls and top with fruit, seeds, and any extras you love.
