Ingredients

  • 1/2 cup quinoa

  • 1 cup water

  • 1 cup unsweetened plant-based milk (almond, oat, or coconut work well)

  • Pinch of sea salt

  • 1–2 tsp maple syrup or date syrup (optional)

  • 1/2 ripe banana, mashed (for natural sweetness and creaminess)

  • Pinch of cinnamon

  • Toppings
  • Fresh fruit (e.g. berries, sliced pear, grated apple)

  • Chopped nuts or seeds (e.g. pumpkin seeds, almonds)

  • Coconut flakes

  • A swirl of nut butter or tahini

  • A dash of cinnamon (optional if tolerated)

Directions

  • Soak quinoa in cold water for an hour before cooking.
  • Add rinsed quinoa and water to a small saucepan.
  • Bring to a boil, then reduce heat, cover, and simmer for about 10–12 minutes until most of the water is absorbed.
  • Stir in the plant-based milk, mashed banana, and salt.
  • Simmer uncovered for another 5–8 minutes, stirring occasionally, until creamy and thickened to your liking.
  • Taste and add maple or date syrup if desired. Spoon into bowls and top with fruit, seeds, and any extras you love.
